Genova Yellowfin Tuna in Olive Oil atop whole milk mozzarella topped with sweet peppadews, Swiss cheese triangles finished with arugula and a swirl of Russian dressing.

Ingredients

  • 1 (12 ounce) dough ball
  • 1 (3 ounce) can Genova Yellowfin Tuna in Olive Oil
  • 7 ounces whole milk mozzarella
  • 3 ounces quartered peppadew peppers (substitute cherry peppers, roasted red peppers or banana peppers)
  • 2 ounces peppadew juice (optional)
  • 3 ounces Russian Dressing (recipe follows)
  • 1/4 cup arugula
  • 2 ounces cut Swiss or Emmentaler cheese
  • salt and black pepper
  • Russian Dressing
  • 1 cup mayonnaise
  • ½ cup ketchup
  • 2 tablespoons sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon horseradish
  • 1 teaspoon finely chopped white onion
  • 1 teaspoon finely chopped garlic
  • 1 tablespoon course salt
  • 1 teaspoon black pepper
  • 1 teaspoon fancy dark chili powder
  • 1 tablespoon finely chopped parsley
  • 1 teaspoon of your favorite hot sauce (optional)

Directions

  1. Break the tuna in small pieces and soak in peppadew reserve juice
  2. Stretch one 12-inch pizza
  3. Cover with mozzarella
  4. Cook at 550 degrees (gas oven) for 7 minutes; Can also be cooked in a wood fire oven
  5. Remove from oven and top with Genova Tuna, peppadews, arugula, and cut cheese
  6. Finish with a swirl of Russian dressing
