Strato Quinoa Tonno

Layered arugula and quinoa topped with Genova Yellowfin Tuna, sliced red onions and goat cheese, served with a side of citrus dressing.

Ingredients

  • 6-8 ounces quinoa
  • 1 (3 ounce) can Genova Yellowfin Tuna in Olive Oil
  • 2 ounces goat cheese
  • 1/8 cup arugula
  • 3 ounces Citrus Dressing (recipe follows)
  • 1 ounce sliced red onion
  • salt and black pepper
  • Citrus Dressing
  • 1 pint orange juice
  • 2 cups tiger oil
  • 6 ounces Monster
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1.5 teaspoons lemon pepper
  • 3 ounces honey

Directions

  1. Mold quinoa into a round stack
  2. Add arugula, chunks of tuna and red onions on top of the quinoa
  3. Sprinkle chunks of goat cheese
  4. Add salt and pepper to taste
  5. Finish with a drizzle of Citrus Dressing or add it on the side
