Absolutely adore the yellowfin tuna with olive oil. I can eat it straight without adding any extras, it also is extremely healthy! I never knew I could LOVE tuna, especially without mayo!

  • Zest from 1 lemon
  • 1 tablespoon parsley, chopped
  • ½ teaspoon rosemary, finely chopped
  • ¼ cup shredded parmesan cheese
  • 1 (8 ounce) bag tortilla chips
  • 2 (5 ounce) cans Genova Yellowfin Tuna in Olive Oil, drained
  • 1 large tomato, diced
  • 4 green onions, chopped
  • 1½ cups shredded mozzarella cheese


  1. Preheat oven to 425 degrees F.
  2. Place lemon zest, parsley, rosemary and parmesan in a small bowl, stirring to combine.
  3. Place chips on a baking sheet and top with tuna, tomato, onions, and parmesan mixture. Scatter mozzarella over the top. Bake until cheese has melted and begins to bubble, about 5 minutes. Remove from heat and serve immediately.
