Tuna, Black Bean and Sweet Corn Salad

Surround yourselves with love. The more the merrier! This go-to salad is easily scalable to 2, 3 or 4 times to please a large hungry crowd. Make it a day ahead and stir in the cilantro an hour or so before serving.

Absolutely adore the yellowfin tuna with olive oil. I can eat it straight without adding any extras, it also is extremely healthy! I never knew I could LOVE tuna, especially without mayo!

Ingredients

  • 2 (5 ounce) cans Genova Tuna in Olive Oil
  • 1 (14.5 ounce) can corn kernels, rinsed and drained
  • 1 (14.5 ounce) can black beans, rinsed and drained
  • 1 medium red bell pepper, diced
  • 8 green onions, finely sliced
  • 1 (4 ounce) can roasted green chiles, diced
  • 1 1/2 cups queso fresco, crumbled
  • 1/2 cup fresh cilantro, chopped
  • 1/3 cup lime juice

Directions

  1. Place all ingredients in a large bowl, tossing to combine.
  2. Serve immediately or cover and chill for up to 1 day.
